When I was in high school, I had a friend who would make the most delicious cinnamon-sugar pecans for an after-school treat for us. We all know how I love pecans and cinnamon, so you know I adore these. Recently, I began thinking about those pecans and how very good they are. On a whim, I thought I would incorporate them into some baking. I wanted those sweet pecans to be the star, so I added them to a simple bar that would let them shine.

Long before I'd even considered starting this blog, I used to make this pie for the holidays when I wanted a break from traditional pecan pie. While at its heart, this is more traditional than not, this pie has a couple of interesting things going for it. First of all, it has a buttery, cream cheese-y crust. Secondly, for those of you who love that gooey filling of pecan pies, there's more of it than usual in this beauty.

As someone who is a fan of cheesecake, chocolate, nuts, and caramel, it's no surprise that I would enjoy turtle cheesecake. Not the ubiquitous mass-produced kind, but the actual homemade variety. Cheesecake is not that difficult to make, but it is time-consuming. So, for the holidays, I thought it might be a grand idea to take all of those delicious elements and condense them into cookies. Boy, was I right!

Some people like cookies that are sweet and delicate. These, my friends, are not those cookies. No, these are big, hearty cookies brimming with all kinds of good stuff - oats, chocolate, toasted pecans, and coconut. Suitable for a cowboy, I suppose. The recipe is adapted from Tate's Bake Shop's newest cookbook, Baking for Friends. The book has lots of good looking cobblers and tarts and such, but I kept coming back to these cookies. If you've been following the BoB happenings for a while, you may remember that I made a Pecan Pie Cheesecake a few years ago. It was, in a word, glorious. I love everything about it. If that dessert was cheesecake with a bit of pecan pie, then this one is pecan pie with a bit of cheesecake. That little layer of cheesecake adds a bit of unexpected creamy sweetness to traditional pecan pie.
