Chocolate Pecan Cheesecake Bars

Some of you may have noticed that I've been absent of late from BoB. I have many excuses, but I won't get into all of that. The important thing is that I finally share with all of you some of the things I've been baking.

First up are these amazingly delicious bars. Imagine a buttery pecan crust. Now, let's put some cheesecake on top of that. But not just any cheesecake - chocolate cheesecake. Sounds good, huh? Well, how about a pecan pie layer on top of that? I know!!!

This Halloween, if you have any candy left over, this recipe is just the thing. Of course, just to make sure, maybe you should go ahead and set aside some of that candy. You're definitely not going to want to pass on these.

I was hit with a wave of nostalgia when I happened upon this recipe from Everyday Food. My mother used to make a very similar sweet treat. She took the quick and easy route, using refrigerated peanut butter cookie dough baked in mini muffin cups. Then, she would press a peanut butter cup into the center when they came out of the oven.

For my recent birthday, I received Tish Boyle's The Good Cookie. This book is packed with a good variety of cookies in all shapes and sizes. It seems not quite right that the first recipe I made from this book is not a cookie at all, but these wonderfully rich brownies. However, having sampled these brownies, I stand by that decision.

Ever since I made that Berry Tart, I've been wanting to bake something else with blackberries. Raspberries seem to be my berry of choice, but those blackberries in that tart really had me wanting to stray a bit from the usual.

At least once a year, I can count on Quinn taking over the baking in the BoB kitchen. That occasion is my birthday. This year, there was much deliberation on what would be my birthday cake. The final decision was pieced together from a few different recipes and Quinn's insistence that there be frosting involved.

View a printable recipe or more photos While I may not be a huge fan of plain chocolate cake, I can certainly sing the praises of chocolate cake with some added interest. Cinnamon, cream cheese, peanut butter, or, in this instance, a liqueur.

I found this cake recipe while flipping through The Magnolia Bakery Cookbook. As you well know, I do love to make a Bundt cake. Plus, there's chocolate and amaretto. How could I go wrong?

I've mentioned before that I'm not much of a "pretty dessert" maker. I lack the patience for intricate detail work or even for frosting a cake. When I make cupcakes, they are the ones without all the pretty frosting and such. I'm all about simple.
