Unintentionally, I seem to have started 2012 in a very similar way to 2011. Last year, there was that amazing Oatmeal Chocolate Chip Cake. And now, this year begins with this fantastically easy, very tasty quick bread that also features chocolate chips and oats.

I have a bit of an addiction to baking bars. To me, they're the best of all baking worlds. Seriously, I could dedicate this entire blog to bar recipes. If I were to do that, I might start to bore some of you, so I soldier on with a little more variety. Today, though, we have bars!

To me, few things scream, "Fall!" as much as baking with apples. We have been sitting on the fence here between fall and winter. Some days are scarf-worthy, while others are not even jacket-worthy. On a fall-like day, I decided to slice up some apples and make this cake that I've had bookmarked for a while. Of course, what are apples without cinnamon? And just to make it even more fantastic, let's throw in a little caramel, too. Seriously, this is fall in a cake.

If there's one thing I wish I baked more often, it's muffins. How much nicer is it to have a homemade muffin for breakfast instead of the usual breakfast fare? I am not known for being a morning person, which most likely explains the few and far between muffin recipes on BoB.

View more photos My first baking love will probably always be chocolate. I'm sure I am not alone in that sentiment. However, I do try to vary things a bit around the BoB kitchen. These bars are a nice deviation from the norm. I'm pretty much a fool for the crust and crumb of these bars. Butter, oats, brown sugar, cinnamon, and pecans.... Yes, please! There's just something so warm and comforting about that combination. It's hard to resist.

I found this recipe while flipping through Nick Malgieri's Perfect Cakes. He prefaces it by saying that he makes this cake about half a dozen times every summer. Knowing how much I have liked his recipes in the past, I did not hesitate to turn on the oven and get to baking.
