As that collection of recipes last Friday hopefully conveyed, I love baking with berries. I love all kinds of berries, but if I have to pick a favorite berry, I would likely choose blueberries. And, one of my favorite uses for blueberries is muffins. Just to make these blueberry muffins even better, I used one of my favorite baking ingredients - sour cream. I love the texture and flavor that it adds. These little muffins are everything you'd want in a blueberry muffin. They are seriously dangerous, though, because you'll be tempted to eat one right after another.

Just last week, I shared my love of mini desserts with a collection of my favorites. That love lives on with these coffee cakes. Recently, The Pampered Chef sent me a big box full of good stuff to try. As soon as I spotted their new Single Servings Pan, I knew that I would put it to good use. The cups of the pan are deep and tapered, so it's perfect for making pretty individual treats that stand tall.

Recently, I've been on a bit of an organizing streak. I generally consider myself organized, but there are new levels of obsession around here. I think I owe some of that to living in New York. Small spaces are pure misery without some extreme organization. As I was rearranging the cabinet that passes for my baking pantry, I found some dried blueberries stuck behind a giant bag of cinnamon. So, obviously, I had to pause the organizing and make cookies.

I confess that I'm more than a little intimidated by the prospect of baking biscuits. They seem a bit time-consuming for such an anti-morning person like myself. All that dough-shaping and biscuit-cutting and such is just a lot to ask so early in the day. Behold the beauty of drop biscuits. There's mixing. All in one bowl, I might add. There's scooping. There's baking. That's all that's required to get you on your way to homemade biscuits.

My dear baking friends, I'm hoping you were intrigued and excited by the word "simple" in the title of this recipe. I can't express to you how pleased I am to have this recipe in my arsenal. It is such a perfect way to make use of summer fruit that I know it will make many repeat appearances on my table for many summers to come.
