Peanut Butter Cookie Bars

I didn’t really plan on making these bars. But, they just kind of happened.

I made a huge mistake. The last time I ordered from Nuts.com, I somehow reasoned that it would be a great idea to order a bag of peanut butter M&Ms. Have you tried these? I’m generally just a peanut M&Ms kind of girl, but good heavens!

I think it both a good and bad sign that as I began poring over my shiny new copy of Baked Elements, I became thoroughly enamored with the very first recipe. Good, in that I knew that the Baked guys had come through yet again with their latest book. Bad, in that, at this rate, I would likely have a hard time narrowing down what to bake first.

Peanut Butter Chocolate Bars

Recently, I was offered a sampling of the new cake mixes from Anne Byrn, better known as the Cake Mix Doctor. The timing was really perfect as we were getting ready to move, and I was looking for some simple recipes to keep BoB going before, during, and after the move.

Cake mixes are one of my favorite shortcut ingredients. As much as I like to bake from scratch, some of my favorite cakes are made from a mix (hello, Rum Cake!).

Chocolate-Peanut Butter Sandwich Cookies

In case you were wondering, I’m still just as much of a fan of chocolate and peanut butter as I’ve ever been. I hope at least most of you share that sentiment because you’re likely to see that combo on this blog for years to come.

We start with dark chocolate cookies. These are pretty delicious on their own. I love the addition of roasted peanuts to the cookies. I don’t think I bake enough with peanuts. Sure, there are plenty of recipes here with pecans or hazelnuts or almonds. But, peanuts just don’t show up nearly enough.

Peanut Butter-Chocolate Chip Pie

Summer is most assuredly the season for no-bake desserts and cold desserts. Not only is it nice to get a break from the hot oven, those cold desserts are lovely to eat when it’s scorchingly hot.

It’s no secret that I adore the combination of peanut butter and chocolate. I use it in cookies, brownies, cakes, and anything else I can manage. A strong case could be made that there is no better friendship in the dessert world. It’s surely in the top 5.

Peanut Butter and Jelly Thumbprint Cookies

Peanut butter and jelly are a long-standing comfort duo for me. I wouldn’t even try to think how many pb&j sandwiches I’ve eaten in my lifetime.  Not exactly a gourmet meal, but I’ll take it just the same.

These cookies take that old favorite combination and move it into dessert territory. I started with what is my most often made version of peanut butter cookies. When they’re hot from the oven, a little indention is made and then later filled with your favorite jelly or preserves.
