I admit that I have a healthy appreciation for kitchen gadgets. I am quite sure that I would have a hard time giving up my stand mixers, food processor, hand mixers, and a number of other complex appliances that fill my kitchen and pantry. Even with all of that, I do enjoy baking with just a couple of bowls and a spoon.

A few years ago, Quinn came up with this recipe as a special treat for me. I love, love, love all things cream cheese. Somehow, the recipe got buried among the countless recipes I’ve collected. Then, the other morning, I woke up to find that Quinn [...]

My friend Tonya sent this recipe to me ages ago, and I put it in my embarrassingly enormous and ever-growing “to try” collection. One obstacle that has detained me in making these muffins is finding spelt flour in my area. I finally resigned myself to ordering some [...]
Pecan Muffins

I woke up earlier than usual this morning and decided to take advantage of the extra time by whipping up something for breakfast. I am terrible at keeping track of recipes I want to try out of cookbooks. I am, however, pretty dang organized with online recipes I want to try. Looking [...]

Oatmeal Chocolate Chip Muffins with Chocolate Streusel

A search through my “to try” list for a quick and easy breakfast recipe led me to this recipe from Quaker Oats. What I made was an adaptation of this recipe, based on what ingredients I had on hand. The ingredient list is a bit long for me to be saying that it’s [...]

Coconut Almond Muffins
June 30th, 2006 · No Comments
This morning, on a long-awaited day off from work, I woke up with the overwhelming urge to make muffins. With Quinn out for the day, I had a good excuse to use some of the coconut left over from Fathers’ Day’s Chocolate Coconut Almond Cheesecake. Quinn really doesn’t like coconut, but I love [...]
