Biscoff Cupcakes

A few weeks ago, I bought a jar of Biscoff Spread with no real plans for it. For those of you unfamiliar with the product, it’s a spread made from those Biscoff cookies eaten by anyone who has ever flown Delta.

Quinn loves those Biscoff cookies so much that I usually just give him my pack and go for the peanuts instead. Still, there’s no denying their deliciousness. Their caramel-y, cinnamon-y flavor is a true winner.

Strawberry Cupcakes with White Chocolate Frosting

Despite the rumblings that cupcake excitement is dwindling, I am still a believer. I don’t make them all that often, but you can believe that they are the first things I peruse at a bakery.

These cupcakes are just about perfect for summer. A whole bunch of strawberries live happily inside a tender, moist cake. The white chocolate frosting is a delicious complement to all that berry goodness.

Mexican Chocolate Cupcakes with Dulce de Leche Frosting

To me, dulce de leche is one of the great inventions of the food world. It takes the idea of caramel and moves it into the territory of the amazing. I haven’t done a lot of baking with it, but I think I more than make up for that with this frosting. I’ve combined the amazing with another favorite, cream cheese, to make a simple to make, creamy, caramel-y frosting.

Chocolate Chunk Cupcakes

While these cupcakes might not offer anything revolutionary in the baking realm, they do a very good job of being that magical combination of simple and delicious.

These are also my favorite kind of cupcakes to bake. I don’t really get into full-out decorating. Honestly, my frosting skills are a bit lacking as well. I do go the traditional route now and then, but these are the kinds of cupcakes that generally warrant a bookmark from me.

Brown Sugar Pound Cakes with Brown Sugar Cream Cheese Frosting

In a strange turn of events, it seems I have baked something with neither chocolate nor nuts. For those of you who are astonished, I think I may have redeemed myself by the presence of cream cheese frosting.

I am further redeemed by the perfection that is these cupcakes. Oh, my, but they’re good. Basically, these lovely little pound cakes are loaded with brown sugar, creating a wonderful caramel-like flavor. Then, they are topped off with an amazingly simple, delicious cream cheese frosting that features even more brown sugar.

Hummingbird Cupcakes

During our last trip to New York, we hit up the Cupcake Stop truck for an afternoon treat. I was surprised to find Hummingbird Cupcakes on their menu. For those of you unfamiliar with this particular cake, it is a fabulous Southern dessert that has been around for ages.
