Coconut-Pecan Macaroons | Bake or Break

But, at the beginning of an insanely busy week, these little cookies appealed to me in a big way.

I can’t imagine a more simplified way to make macaroons. The handful of ingredients you’ll need are ones most of us usually have on hand. You don’t even need sugar. You’ll get plenty from the coconut and condensed milk. They mix in mere minutes. And, on top of all that, they’re really good!

Chocolate-Speckled Salted Shortbread

I have a slight obsession with shortbread. I’m fascinated by how its simplicity translates into so much flavor.

I also have more than a slight obsession with the combination of sweet and salty. I even dedicated a BoB Collection to that magical fusion of flavors.

These shortbread cookies are the blessed union of those two addictions.

Brown Butter Snickerdoodles

This year, I very excitedly signed up to participate in The Great Food Blogger Cookie Swap. I missed out on the fun last year, so I was sure to get my name on the list this year. Not only is it a fun way to share cookies, it also benefits Cookies for Kids’ Cancer.

The idea is that food bloggers sign up and then receive addresses of three food bloggers to send cookies to for the holidays. In return, you receive cookies from three different bloggers. I received some delicious cookies from Wine Imbiber, Kara Miller, and Mika Abogado. Thanks, ladies!

If you’re looking for cookies that are quick and easy but look like anything but, look no further. And, honestly, aren’t we always looking for those kinds of desserts?

These little almond cookies are not too sweet. And, actually, they’re pretty tasty on their own. They can be made in one bowl. That’s always a plus, but especially so when I’m doing so much baking.

Turtle Cheesecake Thumbprint Cookies

As someone who is a fan of cheesecake, chocolate, nuts, and caramel, it’s no surprise that I would enjoy turtle cheesecake. Not the ubiquitous mass-produced kind, but the actual homemade variety.

Cheesecake is not that difficult to make, but it is time-consuming. So, for the holidays, I thought it might be a grand idea to take all of those delicious elements and condense them into cookies. Boy, was I right!
