When we moved to New York just over a year ago, I was forced to whittle down my cookbook collection. Believe me, losing 3000 square feet of living space will make you whittle down a lot of things. I spent a lot of time and thought considering what books would make the cut.
My collection is about 85% baking books. One of my favorite kinds of baking books is bakery cookbooks. To me, those are just the best. I’m pretty sure all of those made the cut. An old favorite of mine is The Sweet Melissa Baking Book. From that book, I share with you these brownies.

With this recipe, I’m going back to some of my baking loves – chocolate, nuts, and bars. You had to know I wouldn’t stray for long. These bars are certainly a good way to reunite with some old favorites.
One of my other great baking loves is pecan pie. Now, imagine a pecan pie in bar form, but with cashews and chocolate. That’s what we’ve got here. And, it’s a beautiful thing.

Here we go again with bars. I know, I know. I just can’t seem to help it. In defense of bars, they’re easy to make. They make enough for a crowd. And, they’re usually pleasing to that crowd.
The flavor of these bars is a bit different than my usual bar recipes. Dulce de leche is definitely underused in my kitchen. I love its caramel-like, smooth flavor.

I have a bit of an addiction to baking bars. To me, they’re the best of all baking worlds. Seriously, I could dedicate this entire blog to bar recipes. If I were to do that, I might start to bore some of you, so I soldier on with a little more variety. Today, though, we have bars!

This blog isn’t readily described as being jam-packed with things that are good for you. I fervently believe that we all need a sweet treat now and then, and I do so enjoy baking them.
Recently, the good folks at Cooking Light offered to send me a copy of their new cookbook, Cooking Light Way to Bake. Despite the baking indulgences of this blog, I do bake a surprising number of recipes from Cooking Light, so I readily accepted.

Lately, I’ve been going through brown sugar like you would not believe. Actually, I guess you would believe it if you’ve been keeping up with my recent recipes. I must say that I love the impact of brown sugar in baking. It just seems to give baked goods a little extra boost.
These bars are certainly not shy with the brown sugar. Two cups in a batch of bars is surely significant. Keep in mind that with all that brown sugar front and center taste-wise, you’ll need to ignore that old rock-hard lump of brown sugar you have stored in your cabinet and open up a fresh box.
