It’s the end of a crazy, crazy week, at least for me. I hope yours has been far calmer than mine. I’ve baked so much this week that I lost track of what all I’ve made! I suppose that’s a good problem to have, at least for the recipients of all of those baked goods.

We are a day away from December, which means cookie season is here! Holiday time just seems like cookie time, doesn’t it? I’ve started a Cookies board on Pinterest just in time for full-tilt baking season. Be sure to keep an eye on that for some cookie inspiration. You can also peruse my Recipe Index.

Apple Pecan Cobbler

I’ve been holding out on all of you. I’ve been reluctant to share this recipe because I felt like it was too easy. But, then I thought that during the busy holiday season, we can all use a little bit of too easy.

This is the easiest apple cobbler you’ll ever make. Actually, it’s the second easiest, but I’ll get to that in a minute.

Cowboy Cookies

Some people like cookies that are sweet and delicate. These, my friends, are not those cookies. No, these are big, hearty cookies brimming with all kinds of good stuff – oats, chocolate, toasted pecans, and coconut. Suitable for a cowboy, I suppose.

The recipe is adapted from Tate’s Bake Shop’s newest cookbook, Baking for Friends. The book has lots of good looking cobblers and tarts and such, but I kept coming back to these cookies.

Pecan Cheesecake Pie

If you’ve been following the BoB happenings for a while, you may remember that I made a Pecan Pie Cheesecake a few years ago. It was, in a word, glorious. I love everything about it.

If that dessert was cheesecake with a bit of pecan pie, then this one is pecan pie with a bit of cheesecake. That little layer of cheesecake adds a bit of unexpected creamy sweetness to traditional pecan pie.

Mixed Nut Tart

I’ve been making a family recipe for pecan pie for many years. It’s just your straightforward, traditional pecan pie. And that’s what I like about it.

This year, I found myself wanting something a little different. So, I decided to take the idea of that pie and change it up a bit. A little brown sugar, a variety of nuts, and there you go!
