Caramel and Chocolate Pecan Bars
Since becoming a dedicated Mac user, one of my favorite things has been Yep. Basically, Yep is an organizational tool for PDF files. As a companion, we acquired an invaluable, efficient scanner to make life even easier. You may ask what this has to do with baking and, more specifically, this post. That’s very simple. I now have one single place to keep up with recipes clipped from magazines and recipes I find online. They are tagged and sorted within an inch of their little lives, and I can find any of them with ease.

In a recent scanning session, I found this recipe I had clipped out of who knows what magazine. It’s actually from an ad for Land O’Lakes. It seemed simple enough, with an added bonus being that I had all the ingredients on hand. As you can imagine, I make sure I never run out of pecans.

These bars are very simple and even more delicious. The caramel and chocolate give an interesting twist on traditional pecan bars. With it being holiday time, I always assess a baking recipe’s gift-giving potential, and this one passes with flying colors.

    So funny that you just made and posted these! I was going through my hundreds of clipped recipes this week and found the same one from Land O Lakes! I made them and think that next time I might double the caramel. How do you think that would be?

    I think more caramel is a great idea, Lauren. I didn’t do a stellar job of doling out the caramel, so I had a few spots that didn’t get any. Doubling might be a bit much for my taste, but an extra 50% might be just the thing.

    I had the same problem with some spots not having any. I think you are right- I’ll try an extra 50% next time.

    I just wanted to make a comment not about the recipe but about Yep. I am not a Mac user so I went on search for something to use to organize my recipes that I get from the internet. I came across something that I already had. The program is call Microsoft Office One Note. It comes with Microsoft Office. I have the 2007 version. The best thing I like about the program is that it adds a button to the tool bar and when I find a recipe that I like I just click on the button and it downloads it to a One Note folder. I haven’t gotten into the program all that deep but I do know you can organize it into folders; which can then be organized into categories. I think it is worth a peek.

    Good to know, Teri. I figured there was a similar application for PCs. Yep has been such a great tool for me.

    I am glad I read ya’lls comments about increasing the caramel…the more the better! I need to take a treat to a bedridden friend and that sounds perfect!
