Raspberry Oat Muffins

Recently, I was looking through past BoB photos for a little project and happened upon photos of these muffins. I quickly realized that I had never shared the recipe with you. And, believe me, these muffins want nothing more than to be shared with you! This recipe is a bit different than the traditional muffin. I added oats to them to give them a little extra flavor and a hint of chewiness. I adore raspberries, but feel free to use your favorite berry to make these your own.

Banana Pecan Chocolate Chunk Cookies

I hope you'll forgive me for consecutive chocolate chip cookie recipes. Like I said earlier this week, I just never grow weary of variations on the classic. These cookies are a hybrid of two fabulous things - banana bread and chocolate chip cookies. The bananas add flavor and some sweetness. The oats add some chewiness. And, of course, pecans add their own awesomeness. They are moist and chewy and quite delicious.

I confess that I don't often bake with whole wheat flour. I think that's due more to habit than taste. But, it can be a great substitute for traditional flour in many recipes, like this one. I am fairly confident that if you tasted one of these without knowing the list of ingredients, you'd never guess that they are made with whole wheat flour. In fact, of all the cookies in my recent baking memory, these are probably in the top 10.

My grandmother's kitchen always had a box of oatmeal cream pies. They were those store-bought kind with the thin, soft oatmeal cookies sandwiched around a sweet filling. I shudder to think how many of those I ate in my childhood. I somehow never really thought about trying to make them myself. One of the first food trucks I visited in New York was The Treats Truck. I vividly remember taking far too long to order because I couldn't decide what sounded best. That truck, affectionately named Sugar, is still going strong and offers a plethora of tempting cookies, brownies, cupcakes, and many other amazing treats. New to my cookbook collection is The Treats Truck Baking Book. Like Sugar himself, it is also filled with so many good things that it's hard to choose a place to start. After much deliberation, I chose to start with these oatmeal thumbprint cookies. I'm always a sucker for an oatmeal cookie (minus the raisins, of course), and I always have a fully stocked jam/jelly/preserves section of my refrigerator.
