But, then I thought that during the busy holiday season, we can all use a little bit of too easy. This is the easiest apple cobbler you'll ever make. Well, my friends, I am less than happy to say that summer is officially here. I've never been a fan of hot weather. This year, though, I'm going to try to think of every day of this heat as one day closer to fall. On a happier note, there are two things I like about summer. I do like having more daylight hours. I somehow feel like I have more time to get things done. Best of all, though, is all the fruit available from the local markets. I admit that I get a little giddy when I start seeing the first fresh berries of the season.

Banana Bread Cobbler

Most bakers, even the occasional ones, have most likely made banana bread at least once. It's a simple thing to whip up, it's delicious, and it's a good use of very ripe bananas. The problem, at least to me, is that I get a little bored with it. I am always looking for variations to make it a tad different and more interesting.

View a printable recipe or more photos Sometimes I think chocolate can be made into just about any dessert form. Here we have it as a cobbler, which is usually associated with fruit. While I don't think that this is a cobbler in the traditional sense, I find that it's so good that I don't really care what you call it.
