During my time at King Arthur Flour's Blog & Bakeā¢, I found a new love. Now, don't worry. Quinn is not going anywhere. I found a new baking love - white whole wheat flour. Sure, I'd seen it before, but I always kind of discounted it and went with traditional wheat flour when needed. But, I found out that white whole wheat flour has all the benefits of whole wheat flour, but it produces lighter-colored baked goods with a milder flavor. There's red wheat, where we get whole wheat flour, and then there's white spring wheat, which gives us white whole wheat flour.

So, here's the thing. This recipe is one of the bonus recipes in my new cookbook that's available in the iBookstore. My intention was not to share it here on BoB, but I've gotten such strong reactions to these that I feel that it would be a disservice to you non-iPad owners. These brownies took less than an hour from the ghost of an idea to warm, gooey chocolate awesomeness. I was inspired by those Magic Cookie Bars we all know and love. While they are perfectly delicious with their graham cracker crust, it seemed that making the base a fudgy brownie would make something decidedly amazing. I was so right.

Some people like cookies that are sweet and delicate. These, my friends, are not those cookies. No, these are big, hearty cookies brimming with all kinds of good stuff - oats, chocolate, toasted pecans, and coconut. Suitable for a cowboy, I suppose. The recipe is adapted from Tate's Bake Shop's newest cookbook, Baking for Friends. The book has lots of good looking cobblers and tarts and such, but I kept coming back to these cookies. Summer is most assuredly the season for no-bake desserts and cold desserts. Not only is it nice to get a break from the hot oven, those cold desserts are lovely to eat when it's scorchingly hot. It's no secret that I adore the combination of peanut butter and chocolate. I use it in cookies, brownies, cakes, and anything else I can manage. A strong case could be made that there is no better friendship in the dessert world. It's surely in the top 5.

I hope you'll forgive me for consecutive chocolate chip cookie recipes. Like I said earlier this week, I just never grow weary of variations on the classic. These cookies are a hybrid of two fabulous things - banana bread and chocolate chip cookies. The bananas add flavor and some sweetness. The oats add some chewiness. And, of course, pecans add their own awesomeness. They are moist and chewy and quite delicious.
