We are all guilty of throwing out food. Those leftovers you thought you'd eat. That mystery container well past its due date. But, I have a hard time throwing out bananas. Overripe bananas can be the beginning of far too many good things to let them go to waste. This weekend, I found myself with several super-ripe bananas and took to the internet to find something a little different to do with them. That's when I found these bars.

I tend to become utterly engrossed in things I love. That is how I've ended up hoarding cookbooks, dreaming of Yankees season tickets, living in New York City, and, of course, writing and baking for this blog. This year, I very excitedly signed up to participate in The Great Food Blogger Cookie Swap. I missed out on the fun last year, so I was sure to get my name on the list this year. Not only is it a fun way to share cookies, it also benefits Cookies for Kids' Cancer. I don't often buy store-bought cookies. All the homemade stuff makes that unnecessary. After we moved last month, however, I stayed out of the kitchen until we could get settled into the new place. During those days, I discovered Brooklyn's own The Good Batch at a local market. On impulse, I bought a package of their Brown Butter Salty cookies. These amazing cookies are a soft shortbread made with browned butter and topped with a pinch of salt. I was hooked immediately. So, I set out to make something similar.

After 6+ years of baking and blogging, sometimes I think I've covered all the baking bases. Then, I realize that I've inexplicably ignored something so delicious that I set out to rectify that as soon as possible. That's the case with browned butter. How have I never done this? If you're not familiar with the concept, browning butter creates a rich, nutty, amazing taste that is pretty hard to beat. It's fairly simple to make browned butter. All you need is a saucepan, a spoon, and some butter.
