White Chocolate and Pistachio Cookies

  • 1/2 cup (scant) unsalted butter, softened
  • 7 tablespoons sugar
  • 1/2 cup (scant) brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 cup ground pistachios
  • 4 ounces whole pistachios
  • 4 ounces white chocolate, chopped
Preheat oven to 350 degrees. Beat butter and sugars until soft. Add vanilla and egg, and mix well. Add flour and baking soda, and mix until smooth. Mix in pistachios and white chocolate.
Form dough into balls and place on lined/sprayed baking sheets, leaving ample space between cookies. Bake for 8 to 10 minutes or until done. Cool on baking sheets for a few minutes. Then, remove to wire racks to cool completely.
