As I stared at the bag of mini peanut butter cups on my counter, my brain was churning with different ideas for what I could bake with them. Having previously used them in cheesecakes, brownies, and blondies, I ruled those out in favor of something different. After a good bit of consideration, I decided to go with this cookie recipe from the source of those peanut butter cups, King Arthur Flour.
Let me tell you, that was a great decision. These aren’t just chocolate cookies with peanut butter cups. No, they’re chocolate-peanut butter cookies with peanut butter cups. For my fellow fans of that combination, this is the time to get excited. And, to start gathering ingredients. You’re gonna want to make these.

Peanut butter cookies are one of my all-time favorite sweets. I’ve made many versions from unadorned to full of add-ins. As long as the flavor of the cookie is primarily peanut butter, I’ll take it.

I don’t have the data to back it up, but I would venture to say that peanut butter and chocolate has to be one of the most popular flavor combinations out there. Surely it’s in the top ten. It’s certainly in my top few.
The advantage of that kind of popularity is that the baking world has no shortage of recipes for us fans to try. I don’t imagine I’ll exhaust the possibilities any time soon.

I wouldn’t try to guess how many kinds of chocolate chip cookies I’ve made over the years. It’s hard to grow tired of them, especially with all the different ways you can keep them interesting. Nuts, dried fruits, more nuts, maybe some oats. Or, in the case of this version, macadamia nuts and peanut butter chips.

I’ve been re-visiting some of my favorite cookbooks lately. I don’t have a vast collection, but it’s large enough that some get a little lost occasionally. The positive side to that is that when you find a formerly lost one, it’s a bit like getting a new cookbook… for free!
I happened upon this recipe while re-discovering The Buttercup Bakeshop Cookbook. Of course, it had me at peanut butter. Then, I read the description that stated that these are a favorite at the bakery. With that kind of endorsement, I started rounding up ingredients. Luckily, these are all ingredients that most of us probably have in our pantries all the time.

The recipe for these amazing cookies comes to us from the equally amazing guys at Baked and their cookbook, Baked: New Frontiers in Baking. I’ve only made it over to Red Hook once to sample their creations, but their two cookbooks are certainly well-used in my kitchen.
I’ve had these cookies bookmarked for a while. Recently, I had a couple of baking… Well, I hate to say disasters. Let’s just say I’ve had some challenges of late. Because of that, I found myself wanting to bake something straightforward. Not surprisingly, I turned to an old favorite pair of mine – peanut butter and chocolate.
