I’m not a huge fan of Oreos or, really, any kind of store-bought cookie. I have spoiled myself with the homemade variety. That being said, I am not the least bit hesitant to use store-bought cookies as an ingredient, like with these cheesecakes.
The crust of these little treats is actually a whole Oreo, not crumbs. Leaving the cookie intact makes for a thick crust that gets nice and soft after they’ve baked and chilled. Topping off those Oreos is one of my favorite things – cheesecake. Of course, it wouldn’t meet the legal definition of a cookies and cream cheesecake without even more Oreos mixed into the cheesecake. I especially like the addition of sour cream to the cheesecake filling. It offsets all that sweet with just a little bit of tartness.

I’ve mentioned before that I’m not much of a “pretty dessert” maker. I lack the patience for intricate detail work or even for frosting a cake. When I make cupcakes, they are the ones without all the pretty frosting and such. I’m all about simple.

I realize that I just told you that I don’t often make cupcakes and here are more in the very next post. It’s really just coincidence. I happened upon this recipe by accident and was instantly intrigued. A cupcake that tastes like pecan pie? How could I not try them?
I’ll admit that I was skeptical that these would take even remotely like pecan pie. But, all the comments were so positive that I figured there had to be something to them. Plus, the recipe seemed so easy that I decided it wouldn’t be much of a loss if they were no good.

I have lamented before that I don’t often bake cupcakes. In fact, I don’t really make many things that require frosting. I can usually persuade Quinn to do any frosting that’s needed, because apparently he enjoys that kind of thing. I do like to be self-sufficient, however, so I tend to seek out recipes that don’t require frosting.
