I am a hoarder. Of jams and preserves, that is. I would go count how many jars I have in my refrigerator so I could provide evidence, but I’m actually afraid to know the actual extent of my condition.

In my defense, however, I must say that they are a wonderfully versatile thing. They’re just the thing for spreading onto a freshly baked biscuit. They are a great bagel topping. And they’re a fantastic way to add some fruit flavor to baking when you don’t have fresh fruit readily available.

These bars start with a simple blondies recipe made with a bit of brown sugar and vanilla. That serves as a perfect base for adding your favorite fruit spread. Just dollop the jam on top of the blondie batter and give it a swirl!

I like to use strawberry or raspberry for both their flavor and their color. But one of the beauties of these blondies is that you can very easily customize them to your tastes by simply changing the jam or preserves. In fact, I have a jar of mixed berry preserves in my refrigerator that would be just perfect for another batch!

  1. I confess I am a hoarder too though mine tends to be various chocolates and containers of assorted crumbs. Jam tends to be more my own and argued stored instead of hoarded. But l do need to thin the homemade ones from the freezer and the canned jars before the new produce season begins. As usual you have perfect timing and know my thoughts on what needs to be baked next. Thanks, Jennifer!

  2. If I had a bigger fridge, I guarantee a whole shelf would be dedicated to jams, curds, and preserves! You just never know what flavor you’re going to be craving for your scones, biscuits, or PB+Js. OR for your blondies! These sound super tasty.
