Remember the Cookie Dough-lympics I told you about last week? I made this no-bake cheesecake using Lindsay’s eggless cookie dough from her new book, The Cookie Dough Lover’s Cookbook.
I also couldn’t resist making one of the recipes from the book. These bars, with their shortbread crust and caramel and cookie dough and chocolate just called to me. It wasn’t subtle. They were practically begging to be made.

Brownies are one of my favorite things to bake. Honestly, I like eating them just as much, too. They’re simple to make and they’re packed with chocolate. What more could you want?
It’s easy to dress up a brownie by making it into a tart. While it is still a brownie, somehow it’s just a little fancier. This goes a step further in the dressing up department by adding one of my favorite chocolate companions – hazelnuts.

Happy Friday, my baking friends! It’s been a mostly beautiful week here in NYC. Last weekend, we made our way to Smorgasburg for the first time and soon wished that we’d been regular visitors. We ate far too much but loved every minute. If you’re in the New York area, it’s a great way to try out some great food from local folks.
In baking news this week, the Cookie Dough-lympics kicked off in celebration of the new cookbook The Cookie Dough Lover’s Cookbook. Every recipe in this book incorporates an unbaked, eggless cookie dough for those of us who love to sample the dough as much as the cookie. Several food bloggers were asked to make their own recipe using that cookie dough, and those recipes will be showing up all month. My contribution made its debut this week in the form of this Chocolate Cookie Dough No-Bake Cheesecake.

Peanut butter and jelly are a long-standing comfort duo for me. I wouldn’t even try to think how many pb&j sandwiches I’ve eaten in my lifetime. Not exactly a gourmet meal, but I’ll take it just the same.
These cookies take that old favorite combination and move it into dessert territory. I started with what is my most often made version of peanut butter cookies. When they’re hot from the oven, a little indention is made and then later filled with your favorite jelly or preserves.

I’ve eaten probably more than my share of cookie dough in my lifetime. If I’m making cookies, you can safely wager that I’ll be trying at least a bite of unbaked dough. Of course, we all know that eating cookie dough is not the best of ideas. But, I bet I’m not the only one who’s guilty.
There’s some great news for those of us who like to sample from the mixing bowl. Lindsay of the fabulous Love and Olive Oil has a brand new cookbook just for us. It’s called The Cookie Dough Lover’s Cookbook, and it’s packed with recipes for cookies, cakes, and other treats. Every recipe has a cookie dough component that’s made without eggs.
