When I made these brownies, I just wasn’t pleased with them. I don’t know that it was anything specific. I just didn’t think they turned out the way they were supposed to be. The recipe had a suggestion for a glaze of melted white chocolate. So, I put them in a container, made a mental note to try the glaze, and moved on to something else.
Then, a funny thing happened. We kept eating them. And, the more we ate them, the more we liked them. No glaze. No extra anything. Just these little brownies on their own won us over.

I have a bit of an addiction to baking bars. To me, they’re the best of all baking worlds. Seriously, I could dedicate this entire blog to bar recipes. If I were to do that, I might start to bore some of you, so I soldier on with a little more variety. Today, though, we have bars!

This blog isn’t readily described as being jam-packed with things that are good for you. I fervently believe that we all need a sweet treat now and then, and I do so enjoy baking them.
Recently, the good folks at Cooking Light offered to send me a copy of their new cookbook, Cooking Light Way to Bake. Despite the baking indulgences of this blog, I do bake a surprising number of recipes from Cooking Light, so I readily accepted.

The frequency with which I bake with bananas is dependent on how many we buy that go uneaten. When I see them get to that lovely, ripe, baking stage, I start scouring my brain, all available cookbooks, and the internet for banana recipes. Having made banana bread too many times to count, I really wanted to bake something a little different.

It’s been a while since I baked anything remotely related to cheesecake. That is certainly not due to any lack of cheesecake love on my part. It still ranks right on up there on my list of favorites.
I happened upon this recipe and very quickly moved it near the top of my to-bake list. Cheesecake, peanut butter cups, and simplicity in one dessert? How could I not make these?

To me, few things scream, “Fall!” as much as baking with apples. We have been sitting on the fence here between fall and winter. Some days are scarf-worthy, while others are not even jacket-worthy. On a fall-like day, I decided to slice up some apples and make this cake that I’ve had bookmarked for a while.
Of course, what are apples without cinnamon? And just to make it even more fantastic, let’s throw in a little caramel, too. Seriously, this is fall in a cake.
